This May, the Chives team will launch their fifth food truck season with the addition of a mobile, retro diner to their downtown Baileys Harbor food truck pod. The diner, a converted 25-foot gooseneck trailer fabricated by Ray’s Welding And Custom Steel Fabricating Inc and reminiscent of a classic American diner, will round out the meal offerings for the three food cart pod, offering breakfast. The Chives to Go Bar at the Food Trucks will open early to serve coffee, mimosas, bloody marys, and other breakfast-centric specialty cocktails.
The Mobile Diner, which will be run by the owners of the breakfast staple, Morning Glory of Door County, will build on a new business concept by Chives owner, JR Schonfeld. Shifting from a food truck court run entirely by Chives Staff, the trucks will be owned by Chives but will each be managed independently by chef entrepreneurs. Functioning similarly to a co-op, the model gives managers a format to grow their skills and deliver an exciting mix of offerings to downtown Baileys Harbor.
In addition to the Mobile Diner, visitors will enjoy the original Chives Grill and Griddle, offering an ever-changing selection of gourmet burgers, fries, sandwiches, and unique specials. Parked alongside Grill and Griddle is the second cart in the fleet, Harbor Pizza Company, featuring woodfired pizza using local, seasonal ingredients.
Morning Glory of Door County has been serving classic American diner fare from their flagship location south of Sturgeon Bay on highway 57. Owners German and Nerymar Ramirez have worked back and front house since 2010, purchasing the restaurant in 2015. Then, In 2021, the pair opened Morning Glory by the Bay in downtown Sturgeon Bay. This will be their third location.
“We fell in love with the restaurant. Our happiness comes out of serving our customers. We are excited to spread our service further north up the peninsula and operate the mobile diner,” says Nerymar.
